After returning home from the first CSA potluck of the season, I am so inspired by all the new people I have met and the delicious dishes that were shared!
Kristen, our Farm Manager, filled us in on the crops, and we are headed into a season full of leafy greens! So, this week I thought I would focus on what will be a large part of our CSA shares.
Why we should love our greens:
How to cook them for the biggest nutritional impact: Your body likes when you eat the greens with dressing or cook them with a little oil. Adding a little oil helps the body break down and absorb more efficiently.
