CSA Share: June 16

There’s a lot happening on the farm. To find out the whole scoop, read Shayna’s Farmer’s Note. A few highlights: There will be bread at the market, plus dairy. And we have new fruit and egg vendors.

In the meantime, here’s what she expects us to find in this week’s share:

Full shares:
1 head lettuce
1/2 lb. salad mix
2 bunches herbs
1/4 lb. peas
1 bunch turnips or radishes
1/2 lb. garlic scapes
1/2 lb. mizuna or arugula
1 bunch cooking greens

Small shares:
1/2 lb. salad mix
1/4 lb. peas
1 head lettuce
1 bunch cooking greens
1/4 lb. mizuna or arugula
2 bunches herbs

Garlic Scape, Radish and Chicken Stir-Fry

Red Hook CSA member Stacy Cowley’s “Operation Veggie Decimation” blog probably struck a chord with many of us who have been vaguely alarmed by the increasing amount of vegetables in our fridges. As I scanned the internet for ways to use my garlic scapes last week, I found a chicken stir-fry recipe that called for scapes and radishes, as well as optional snow peas or sugar snap peas.

Since I still had both types of peas from previous CSA shares, this recipe from Fresh Earth Farms was the winner for a weekend dinner. Though cracking open a beer at 11 am as I peered into the vegetable crisper caused a few raised eyebrows, I assured everyone that the beer was for marinating the chicken. After all, the vegetable bounty hasn’t driven me to morning drinking…yet. –Josie Rubio

Operation Veggie Decimation

Week 3: The vegetables are winning.

At the start of the CSA season, my fridge’s crisper drawers were almost bare. Less than a month in, they’re already overflowing. So my plan for this week was to cut a swathe through the stockpile. A recipe uses just one or two veggies? Not good enough! I demand dinners that consume at least five! six! DOZENS!

I decided Step One was to take down the beets — along with a pair of turnips that had been hanging out in my fridge since March. Turnips are apparently indestructible; I can see why people would toss these things in root cellars and live off them for years.

Ceviche Salad

It seems like it has been a long time coming, and then finally, our first CSA share. And what a bountiful selection it turned out to be.

I took an early trip to Prospect Park to supplement what I knew we wouldn’t be receiving in order to push along a theme I had been working on: Strawberry Radish Scallop Ceviche.

This dish pushed my efforts to the next level; the results, along with the wine pairing, turned out to be extraordinary.

There is sweetness in the peas and the scallops, spice in the radishes, garlic scapes and jalapenos, crunch in the lettuce, peas and radishes, fruitiness in the strawberries and the limes.  Like our first CSA share – lots of things going on. - by Jason Adams

CSA Share: June 18

Never seen a garlic scape before? Here's what they look like.

This Saturday is the first pick up of the Red Hook CSA season. We’ll see you on the Farm between 10 a.m. and 3 p.m.

If you want to start dreaming of what you’ll make, here’s the list of what to expect in your share.

o   Peas (here’s Jason Adam’s Pea Carbonara recipe from last season)

o   Herbs e.g. scallions, thyme, oregano, mint, sage

o   Lettuce

o   Asian greens e.g. pak choi, tatsoi (Epicurious has a ton of ideas for tatsoi)

o   Chard (here’s what Stacy Cowley did with her chard after last season’s hail storm)

o   Radishes

o   Beets

o   Sorrel

o   Cress
